Well, that's mean of her.
As I see it, you've got two main options: take it in your stride and don't pursue a relationship with her...
or pretend you never found out it was a lie and ask her how Italy was when she "gets back." How long can you keep up the "innocent" conversation until she reveals the lie? Bwa ha ha ha

Btw, the girl Sarah who I'd been with and have had my heart set on is starting to warm to me. This Kaylan girl was an attempt to move on, but my heart is still with her.

Follow up-follow up:
Apparently she's not that crazy. She just friended me on Facebook, complete with an album of Italy pictures and "I'm leaving" and "I'm back" status updates with a couple weeks of inactivity between them. So, she lied about the day she left? Suspicious? Yes, but we finally made plans for coffee this Saturday. Going to proceed with caution.
